Menemen, aka scrambled eggs with vegetables, is without a doubt ‘the star’ of any Turkish breakfast. The combination of pepper, juicy tomatoes and eggs is simply delicious. Because it’s so easy to make, it is widely enjoyed at lunch and dinnertime too. We are so fond of this dish; the most discussed topic in Turkey after politics must be whether menemen is made with or without onions. Luckily, a recent twitter poll has put an end to this debate. Onion lovers won by 51% against 49%. The below recipe doesn’t include onions, but the choice to add them is yours.

If you are short for time, or your fridge is looking bare, this quick and easy one-pot meal could save the day. Traditionally, eggs are gently stirred into the tomato mixture, but you can make it with different methods too. Either way, this scrambled eggs with vegetables recipe is easy and delicious.

Ingredients

  • 25 g butter
  • 2 Charleston peppers or 1 small green bell pepper, halved, deseeded and finely chopped (see note)
  • 1 chilli pepper, finely chopped
  • 2 small ripe tomatoes, peeled and diced
  • Pinch of salt & black pepper
  • Pinch of red pepper flakes (see note)
  • 3 eggs
  • A handful of parsley to garnish, roughly chopped

Step by Step Instructions

Step 1

Melt the butter in a skillet.

Step 2

Stir in the diced peppers, chilli peppers and tomatoes. Sprinkle over some red pepper flakes, salt and black pepper to taste. Mix them well. Once the mixture starts to boil, cover it with a lid and reduce the heat. Simmer until the vegetables are soft and have released all their juices.

Step 3

Remove the lid and let it simmer for few more minutes until the liquid has reduced slightly.

Step 4

For the eggs, you can follow three different methods:
1st method: This is the most common method. Crack the eggs directly onto the pan and let them cook for a couple of minutes. Then, with the help of a spoon, break up the yolks and briefly stir the eggs into the tomato mixture. The eggs should only be stirred in partially, so they are nice and swirly on top. Continue cooking the eggs until just barely set, yet still soft.
2nd method: While the vegetables are cooking, gently whisk the eggs in a measuring jug. Then pour the whisked eggs in the centre of the skillet. Let them run through the vegetables instead of mixing them yourself. Cook the eggs until they are set. The key is not to overcook them. They should be slightly soft.
3rd method: With the help of a wooden spoon, create 3 pockets in the tomato mix and then break the eggs into these hollows. If you like your egg yolks soft, simmer them until the eggs are slightly cooked. Otherwise, cook a little bit longer.

Sprinkle it with parsley and serve it with Turkish bread.

Notes

Do you want to go for onion version? No problem! All you have to do is to add a small size, finely chopped onion and sauté until slightly soft and golden colour after step 1.

Charleston pepper: It is a type of pepper with a mild taste which is widely used in Turkey. You can find them in Turkish or Middle Eastern shops. If not, you can replace it with a green bell pepper. Bear in mind, it may take a tiny bit longer to cook as it has thicker skin.

Red pepper flakes: These flakes have a moderate heat. You can find them in Turkish or Middle Eastern shops. Ground cayenne powder can be used as a substituteUse half as much ground cayenne to achieve the same level of heat. You can find more information about this here.
