Pan Fried Potatoes (Patates Sote)
These little cubes of pan fried potatoes are crispy on the outside, yet fluffy on the inside.
About Pan Fried Potatoes
Soft on the inside yet crispy and golden brown on the outside, these pan fried potatoes are in perfect company with oven-baked salmon and meat dishes. Chopped garlic and spices make them really tasty.

Before I moved to the UK, I gathered lots of recipes from my family and pan fried potatoes was one of the dishes I jotted down in my recipe book. I have been cooking this side dish for over 15 years and at home we pair it mainly with oven-baked salmon. When I started writing out this recipe, I tried to find out who it belongs to but I did not have any luck. What really matters though is that it tastes good and is very easy to make.
Some Tips
- If you want your potatoes to be crispy and golden brown on the outside, you’ll need to make sure your pan is big enough to accommodate them all in a single layer. If not you can cook them in two batches.
- While cooking stir or flip the potatoes regularly, so they cook evenly.
Ingredients
- 2 tbsp rapeseed oil
- 4 medium-size potatoes, chopped into 1-2 cm cubes
- 2 small garlic, finely chopped
- 1/4 tsp red pepper flakes (see note)
- 1 tsp dried thyme or oregano
- 1/4 tsp salt
Step by Step Instructions
Step 1
Heat the oil in a big, heavy-based non-stick pan.
Step 2
When the oil is sizzling hot, add the cubed potatoes in a single layer. Fry them on low heat for about 20 minutes stirring regularly so that they cook evenly and all sides become golden brown.
Step 3
Add chopped garlic, salt, thyme and red pepper flakes and stir it well. Carry on cooking the potatoes for a couple of more minutes.
Step 4
Take it off the heat and serve immediately.
Notes
Red pepper flakes: These flakes have a moderate heat. You can find them in Turkish or Middle Eastern shops. Ground cayenne powder can be used as a substitute. Use half as much ground cayenne to achieve the same level of heat. You can find more information about this here.
